Ingredients:
Choice of prawns - one kg (just over two pounds)
white vinegar- 750 ml
Turmeric powder- one tsp
Dry red chillies- two dozen
cumin seeds- four tsp
Ginger- a thumb sized piece
Garlic cloves-15 to 20
oil- seven tbsp
salt- to taste
Preparation:
Wash, shell and de-vein the prawns.pat them dry, rub some salt and turmeric powder into prawns and marinate for an hour. Grid red chillies, ginger, garlic and cumin seeds into a thick paste by adding a little vinegar. Heat four tbsp of oil on medium flame and stir fry prawns till golden. Drain on paper towels and allow cooling. Fry the spice paste with three tbsp of oil, till the oil begins to separate from masala. Now add the remaining vinegar (season if necessary) and cook on medium flame for 15 minutes. Allow to cool fully. Place the prawns in a picking jar and pour the cooled spice mix over them. Mix well and allow to ‘resting’ for few days before eating.
